Salad Sensation

I have a new obsession. Creating new salad recipes. This cool, crisp dish is always refreshing on a hot summer day.

I came up with a combination that I can’t get enough of and I wanted to share it with you.

What You’ll Need:

1 Head of Romaine Lettuce
1 Jalapeno Pepper, Diced (remove the seeds)
6 Large Strawberries, Diced
2 Large Eggs, Sunny Side Up or Over Hard (depends if you like runny yolks)
1/4 Cup Crumbled Goat Cheese
1 Breast of Chicken, Diced (or any protein)
1 Corn on the Cob, Cooked and Cut off the Cob
2 TBSP of Garlic Expressions Classic Vinaigrette

Grab a large bowl to mix the salad together. Wash and chop the romaine lettuce.  Dump in the diced jalapeno pepper, diced strawberries, goat cheese, diced chicken (or protein), corn and the dressing. Toss it together. Set aside.

Heat a pan with a little bit of butter in the bottom. I make a sunny side up egg. I break both eggs into the pan and cover with a lid. Cook for about 4-5 minutes, depending on how you like your egg whites.

Pour the salad onto a platter, top with the eggs and serve. The drizzle of the yolks in the salad is delicious. I think I want another one now after writing this post. Enjoy!

Summer Time Salad

One of my favorite things to eat when the weather gets warm is a cool, refreshing salad.

My husband, the strict carnivore, disagrees. He always tells me “craving” and “salad” don’t belong in the same sentence.I try to keep it simple when I’m making salads and use a 5 ingredients or under rule. Here is a quick recipe for one of my favorite combinations.

What You’ll Need:

1 bottle Garlic Expressions Classic Vinaigrette dressing (my favorite dressing)
2 heads romaine lettuce1 head boston lettuce
1 pint of strawberries (washed & sliced)
2 avocados (peeled & diced)
1 4 oz block of goat cheese
1 package of sunflower seeds

Wash & chop all of the lettuce. Put into a serving bowl and toss with the vinaigrette. Dice the strawberries and avocado and put into separate serving bowls. Take the goat cheese and break it up by hand into crumbles. Serve in a separate bowl. Pour your sunflower seeds into a serving dish as well.When I serve a salad at a party, I like to leave all the toppings separate so people can pick and choose what they put on top.Please note: This salad is also delish with grilled salmon or chicken sliced on top.
